I think this elevator was added when Mrs. Schweid (who ran herd on the kitchen) installed walk-in refrigerators and freezers in the newly-dug basement under the kitchen. That let her buy large quantities of beef when she found a good price on prime ribs. (All she'd buy were the ribs. All the beef served in the hotel came from prime ribs...including the "ground steak".)
